Food Preservation Methods
- Canning - Fruits and Tomatoes
The natural acidity of the fruits and the addition of acid (lemon juice, citric acid or vinegar) to tomatoes allows them to be safely processed in a boiling water canner. The heat destroys yeasts and molds that may be present and forces oxygen from the product and jars. This results in the formation of a tight, vacuum seal as the jar cools. Thus, re-contamination of the product by yeasts and molds from the surroundings is prevented. - Canning - Vegetables and Meats
Because vegetables and meats are low acid foods (pH > 4.6), they must be canned in a pressure canner. The high heat is sufficient to kill yeasts, molds, bacteria and to destroy the spores of bacteria such as Clostridium botulinum. The heat results in removal of oxygen from the product and jar. This results in a tight, vacuum seal as the jar cools. When canned foods are opened, precautions must be taken to ensure their safety. - Pickling
When foods are pickled, the acidity of the food is increased. This is done by adding acid in the form of vinegar or by allowing fermentation to occur resulting in the natural production of acid in the product. There are two types of vinegar used in pickling. Apple cider vinegar has a fruity flavor and can be used in pickling fruits. Distilled white vinegar is used for light colored products and products where a fruity flavor is undesirable. The natural acid that is produced is lactic acid that preserves the product. The acid level allows the products to be safely canned in a boiling water canner. The heat results in the removal of oxygen from the product and the jar. This results in a tight, vacuum seal as the jar cools. - Jellied Fruit Products
Jellied fruit products rely on acid in the fruit to limit microbial growth. In addition, sugar and/or pectin is added to bind up water in a product making it unavailable for microbes to grow. Yeasts and molds are destroyed by heating in a boiling water canner which also forces oxygen out of the product and jar. The jars form a tight, vacuum seal when cooled. - Freezing
When foods are frozen the temperature is lowered to a level that halts microbial growth. Water in the product freezes and becomes unavailable for microbes to grow. Freezing, however, does not sterilize the food. When frozen foods are thawed, precautions must be taken to ensure their safety. - Drying
Drying removes water from the food and prevents it from being available for microorganisms to use for growth.
The fan, heating element, and adjustable thermostat are mounted in the rear. Cool air is drawn in the back, heated up, and distributed evenly across each tray. During the dehydration process, warm air removes moisture from foods and is pushed out the front of the machine.
Drying is easy.
A wide variety of fresh foods can be dried: fruits, vegetables, fish and meats. These foods can be eaten dried for snacks and parties, or reconstituted for cooking and baking. Drying is easier than canning or freezing: you simply wash, slice and load food onto the dehydrator trays. Within hours your foods are dried and ready to eat or store.

- Are there tested methods and processes for what I want to do? For example, if I want to can green beans, is there a tested method for doing this safely?
- Do I have enough time all at once to get through the steps involved in preparing and processing the food by the method I have chosen? If the answer is no, then it may be necessary to choose a less time-consuming method as long as that method would yield a good quality product that is safe.
- Do I have the equipment I need for the method I have chosen to use? If not, it may not be cost effective unless you plan to use this equipment a lot.
- Do I have the ingredients called for in the instructions? Prior planning can save you time and money and can prevent product losses. Always check tested directions ahead of time to make sure you have what you need - - - BEFORE YOU BEGIN!

2) CAN I DO A TRIAL RUN WITH ONLY WATER IN MY PRESSURE COOKER/CANNER TO BECOME FAMILIAR WITH THE OPERATION OF THE PRESSURE COOKER/CANNER? Yes, if you are unfamiliar with our pressure cooker, or have never canned before, it is a good idea to familiarize yourself with a trial run before processing any canned goods.
3) CAN ALL-AMERICAN PRESSURE COOKER/CANNERS BE USED ON GLASS-TOP STOVES? No, it is our understanding that the manufacturers of glass-top stoves recommend using only flat cookware, and the ALL-AMERICAN Pressure Cookers have indentations in the bottom. Also, the cooker is quite heavy and if dropped or slid across the glass-top stove, it may damage the cook top. You may want to check with the manufacturer of your range for additional information.
4) WHY CAN’T I REMOVE MY COVER AFTER CANNING? Please know that this will happen from time-to-time with a brand new pressure cooker. This situation does improve with use. Following are some suggestions to remedy the problem:
A.) Apply a thin film of lubricant (extra virgin olive oil or Vaseline) to the metal-to-metal seal (to the edge inside the cooker where the inside wall begins to bevel out). You only need enough lubricant to wet the edge, but not enough to actually see it.
B.) Also lubricate the threads of the No. 64 Wing Nuts and the metal face around the threads of the wing nuts.
C.) Tighten two opposite wing nuts at a time; making sure that there is an even gap all the way around. If you have a problem maintaining the gap, while wing nuts are snug, tighten as follows: If one side is too low, loosen the low side and then tighten the high side directly opposite until it is even, and then tighten both at the same time. Continue to do this with all opposite wing nuts, and then go around one more time to tighten the cover down securely. Do not be afraid to tighten the cover down good and tight.
D.) Check the lubrication between canning batches.
E.) You may also clean the metal-to-metal seal. After wiping the old lubricant off with a soft cloth, use .0000 steel wool, a red 3M Scotch Brite Pad, or an SOS Pad to buff in a circular motion where the cover and bottom meet. Wipe down the sealing surface again using a soft cloth and be sure to lubricate the metal-to-metal seal after cleaning.
F.) If your cover is stuck, there are directions in the instruction manual for removing a stuck cover: Using a large standard screwdriver, pry the cover loose by placing the end of the screwdriver at an angle between the cover and bottom near a wing nut assembly. Do not go straight in with the screwdriver or you will damage the metal-to-metal seal. Gently pry upward using the screwdriver as a lever. Continue to pry upward at each wing nut assembly area uniformly so that the cover is raised evenly. In most cases, the cover should come off rather quickly.
5) WHAT IS THE ADVANTAGE OF THE MODEL 925 OVER MODEL 921 PRESSURE COOKERS? Both cooker/canners hold the same number of jars; the only advantage is when cooking, Model 925 holds 3-1/2 quarts more in liquid capacity.
6) WHERE CAN I HAVE MY STEAM GAUGE TESTED? Some home economists at local county extension agencies still test steam gauges. We do not test gauges as it is more expensive to ship a gauge to us, pay the labor to have it tested, and pay the return shipping charges than to purchase a new steam gauge.
7) IS IT NECESSARY TO HAVE MY GAUGE TESTED WHEN USING THE PRESSURE REGULATOR WEIGHT? No, the pressure regulator weight is actually more accurate than the steam gauge. Many pressure cookers with pressure regulator weights do not have steam gauges. Our gauge is accurate +/- 2 lbs, and is used only as a reference, and to determine when the cover can be safely removed, which is when the steam gauge returns to zero.
8) I CANNOT REMOVE MY STEAM GAUGE / VENT PIPE / TOP HANDLE FROM MY COVER. You can try putting WD40 or penetrating oil on the threads and letting it set overnight; you should then be able to remove the part easily.
9) MY PRESSURE COOKER IS DISCOLORED ON THE INSIDE. This is most likely due to mineral deposits in your water, and may be permanent but not harmful. You can try cleaning with a boiling solution of one tablespoonful of vinegar or two tablespoons of cream of tartar in a quart of water, or by scrubbing with aluminum cleaner or soap impregnated steel-wool cleaning pad.
10) WHERE CAN I GET SPECIFIC CANNING INFORMATION AND RECIPES? Check with cooking/recipe books in your possession or at your local library.
11) WHY DOESN’T MY # 68 PRESSURE REGULATOR WEIGHT RELEASE? Steam may be releasing/escaping from underneath the weight and not jiggling, however, you are most likely at the proper pressure. You may try tapping the weight gently with a knife.
12) WHY DOES MY # 68 PRESSURE REGULATOR WEIGHT CONSTANTLY RELEASE? Most likely your heat setting is too high. Lower your heat setting so the weight releases approximately four times per minute.

Our gauge is accurate +/- 2 lbs, and is used only as a reference, and to determine when the cover can be safely removed, which is when the steam gauge returns to zero.
8) I CANNOT REMOVE MY STEAM GAUGE / VENT PIPE / TOP HANDLE FROM MY COVER. You can try putting WD40 or penetrating oil on the threads and letting it set overnight; you should then be able to remove the part easily.
9) MY PRESSURE COOKER IS DISCOLORED ON THE INSIDE. This is most likely due to mineral deposits in your water, and may be permanent but not harmful. You can try cleaning with a boiling solution of one tablespoonful of vinegar or two tablespoons of cream of tartar in a quart of water, or by scrubbing with aluminum cleaner or soap impregnated steel-wool cleaning pad.
10) WHERE CAN I GET SPECIFIC CANNING INFORMATION AND RECIPES? Check with cooking/recipe books in your possession or at your local library.
11) WHY DOESN’T MY # 68 PRESSURE REGULATOR WEIGHT RELEASE? Steam may be releasing/escaping from underneath the weight and not jiggling, however, you are most likely at the proper pressure. You may try tapping the weight gently with a knife.
12) WHY DOES MY # 68 PRESSURE REGULATOR WEIGHT CONSTANTLY RELEASE? Most likely your heat setting is too high. Lower your heat setting so the weight releases approximately four times per minute.

Major Causes of Food Spoilage
Soon after a food is harvested or slaughtered, spoilage will begin to occur unless steps are taken to preserve the foods. Spoilage can result from physical damage to the food, chemical changes in the food and/or microbial growth in the food.
Physical damage
Physical damage such as punctures, insect or rodent damage and bruising can result in water loss from the product. These wounds also provide a place for microorganisms to get into the product and start to grow.
Chemical changes
There are three types of microorganisms that can cause food to spoil. They are molds, yeasts and bacteria.
Soon after a food is harvested or slaughtered, spoilage will begin to occur unless steps are taken to preserve the foods. Spoilage can result from physical damage to the food, chemical changes in the food and/or microbial growth in the food.
Physical damage
Physical damage such as punctures, insect or rodent damage and bruising can result in water loss from the product. These wounds also provide a place for microorganisms to get into the product and start to grow.
Chemical changes
- Enzymes
Plants and animals contain chemicals called enzymes that help them grow, function and mature. In fruits and vegetables, these enzymes must be inactivated after harvest or they will continue to work and will cause changes in flavor and texture and can cause browning in light-colored fruits. Enzymes can be inactivated by heating the food either in boiling water or steam for a specified time. This is called blanching. Browning in light-colored fruits can be prevented by pre-treating the fruit with ascorbic acid or ascorbic acid mixtures. - Oxidation
The presence of oxygen causes several types of chemical changes in food. Oxygen causes changes in the unsaturated bonds of a fat or oil. The result is oxidative rancidity that spoils food with off-flavors and off-odors. Moderate heat will increase the rate of oxidative rancidity changes. The shelf life of home canned meats stored at room temperature will limit its shelf life. Cold temperatures slow down the rate of rancidity, but even freezing temperatures will not completely prevent oxidative rancidity.
Other oxidation reactions can destroy some vitamins, such as vitamins E and C. Some pigments in plants, responsible for their color, and flavor compounds can be changed significantly by oxidation reactions. The browning of many light-colored fruits is an enzymatic reaction that is promoted by the presence of oxygen.
Some methods of food preservation include controls that limit the damage from oxidation reactions. Pre-cooking food before canning helps remove some of the oxygen that would otherwise be trapped inside the jars and spoil food quality. Canning lids that are applied correctly allow oxygen inside the jar to escape during the canning process, before the jar seals. Many light-colored fruits are kept in ascorbic-acid dips as soon as they are cut, to slow down browning before the fruit is dried, canned or frozen.
There are three types of microorganisms that can cause food to spoil. They are molds, yeasts and bacteria.
- Molds
Mold usually appears on foods as a spot of fuzzy growth. Mold is a very common form of food spoilage because it will grow on a wide variety of products. Molds grow over a wide range of acidity. They grow well in acid foods like fruits and tomatoes (pH of 4.6 or less) and on low acid foods like vegetables and meats (pH greater than 4.6). Molds also grow over a wide range of moisture content and are able to tolerate much drier conditions than bacteria or yeasts. Molds are destroyed by heating to temperatures between 140°F and 190°F. - Yeasts
Yeasts also grow at both high and low levels of acid. Yeasts can cause foods to ferment. Spoilage by yeasts may result in sliminess or bubbling. Yeasts are killed at temperatures between 140°F and 190°F. - Bacteria
Bacteria can multiply rapidly in foods. Some bacteria cause foodborne illness, often without evidence that the food is contaminated. Other types of bacteria simply result in spoilage of the food which is evident as sliminess, cloudiness, softening and/or bad odors. Most bacteria prefer to grow in warm, moist environments. However, some can grow at refrigerator temperatures and others at very high temperatures. Most bacteria can be killed easily by heating. However, some bacteria form spores that can only be destroyed by heating to temperatures higher than boiling (in excess of 212°F at sea level). Clostridium botulinum is a spore-forming bacterium that causes a very deadly type of food poisoning called botulism. Because this organism grows in the absence of oxygen, it is of concern in improperly processed home-canned low acid foods. These types of food require pressure canning to reach temperatures high enough to destroy botulinum spores.

Open Top Cans And Lids All Open Top Cans have tin-plated exteriors. Cans come with a beaded-body for hot-filled applications and other uses that require you to pull a vacuum (except item #'s 3100T01 and 3100T03). How to bottle fruit
Bottling in preserving jars is a time-honoured way of preserving fruit and is one of the only methods (along with fruit drying) that keeps natural flavour and texture fairly intact
without the use of any chemicals or artificial additives. Fruit is preserved by heating it to a sufficiently high temperature so that spoiling bacteria are destroyed. As the preserving jars cool, a vacuum is created that hermetically seals the jars. It’s re-assuring that Granny’s old rules for this essentially simple process have not changed over time! Our pasteurisers make the preserving process easy and efficient. They have both time and temperature control to give you accurate and reliable preserving. Step 1: Prepare your jars Use purpose-made rubber sealed preserving jars with clip or screw lids - we like Weck & Kilner jars. Check lids and jars visually for any small imperfections and make sure the seals are sound. It's best to replace seals regularly to ensure good closure. You can check the effectiveness of the seal by filling the jar with water, sealing and inverting for 10 minutes. If water leaks from the jar, replace the seal and test again. Wash the jars thoroughly in hot soapy water, rinse in fresh water then invert jars to drain them Step 2: Pack jars with fruit Fill the jars with fruit and then top with hot (60°C) water or sugar syrup Tap jars to dislodge air bubbles Dip the seals in boiling water Place seals and lids on jars. If your jars have clips, then fasten them. If they have screw tops, rest the lids on top of the jars and tighten fully as soon as heating has stopped. Step 3: Place jars in a Preserving Cooker Use either model of Vigo pasteuriser - they have an in-built timer and a temperature control to ensure accurate and reliable preserving. Place the jars in the pasteuriser on the rack supplied to ensure they aren't resting on the bottom. The jars can be double stacked. Set the temperature control and the timer to the levels recommended in the instructions The timer will be activated when the appropriate temperature is reached Step 4: Remove jars and check seal Wear Vigo heavy-duty insulated gloves when handling the hot jars If you have used screw top preserving jars then tighten the lids right down after the timed heating is complete Allow the jars to cool slowly Check seals of the Weck clipped-jars by removing the clips and
lifting the jars by their lids. If lids remain on the jars then they have properly sealed. Do not tamper with screw-topped Kilner-type jars Step 5: Recipes The instructions will advise you on the temperature and time required for any particular fruit You can experiment with your own particular mouth-watering sugar syrup and fruit combination You can also use sweetened fruit juice as syrup or add spices and herbs – cinnamon with plums or basil with apples are classics For something a little more exotic add some alcohol to your
recipe, for example, a “slug” of brandy or rum - a dessert that would certainly impress your guests! Step 6: Storing Bottled foods should be stored in a dry, cool and dark place to prevent discolouration. A high quality, robust auto cooker / pasteuriser suitable for juice pasteurisation and jar preservation of fruit, vegetables, and even pickled walnuts. Suitable for the effective pasteurisation of juices and cider on a small scale either in bottles or in disposable bag-in-boxes; 5 litre bags - 2 at a time or 10 litre bags - 1 at a time. You can use it for mulling wine and cider, yogurt making and even as a tea urn for large functions! How it works
For bottle or preserving jar pasteurisation: Fill the bottles or preserving jars to within 2.5cm / 1" of the top with clean, prepared juice or food (peas and beans keep longer if blanched first). Ensure that the bottle caps or rings of the jars are clean and dry. Fit the rubber seal and clip fasten the lids. Place the bottles or jars on the rack that sits on the base of
the tank protecting them from direct heat. Jars can be stacked one on top of another. Fill the tank with water to within 2.5cm / 1" of the top bottle/jars. Place the lid on the appliance. Set the temperature gauge and bring the cooker / pasteuriser to the required heat. Then set the timer for the required length of time for full and accurate sterilisation. For more information on bottling fruit see How to bottle fruit. For bag-in-box pasteurisation using a Filling Support Stand: Place the bag collar into the support stand and fill the bag
allowing some room for expansion of the juice to be heated. Exclude air before the tap is pushed part-way into the collar of the bag. Place 2 x 5 litre bags or 1 x 10 litre bag onto the pasteuriser rack and set the thermostat. When the water temperature reached the set level there may be more air in the bags - remove the bags, place the bag collar in the Filling Support Stand, take out the tap, expel the air and then drive the tap fully home. Return the bag to the pasteuriser, set the temperature, place the lid on the appliance and leave for
the full pasteurisation time. Allow the bags to cool before packing into the cardboard box. Cooking settings and timings for individual drinks or foods are supplied with the machine. (NB The 20 litre bag is not suitable for use in this pasteuriser as the tank capacity of the pasteuriser is insufficient)

How it works
For bottle or preserving jar pasteurisation: Fill the bottles or preserving jars to within 2.5cm / 1" of the top with clean, prepared juice or food (peas and beans keep longer if blanched first). Ensure that the bottle caps or rings of the jars are clean and dry. Fit the rubber seal and clip fasten the lids. Place the bottles or jars on the rack that sits on the base of
the tank protecting them from direct heat. Jars can be stacked one on top of another. Fill the tank with water to within 2.5cm / 1" of the top bottle/jars. Place the lid on the appliance. Set the temperature gauge and bring the cooker / pasteuriser to the required heat. Then set the timer for the required length of time for full and accurate sterilisation. For more information on bottling fruit see How to bottle fruit. For bag-in-box pasteurisation using a Filling Support Stand: Place the bag collar into the support stand and fill the bag
allowing some room for expansion of the juice to be heated. Exclude air before the tap is pushed part-way into the collar of the bag. Place 2 x 5 litre bags or 1 x 10 litre bag onto the pasteuriser rack and set the thermostat. When the water temperature reached the set level there may be more air in the bags - remove the bags, place the bag collar in the Filling Support Stand, take out the tap, expel the air and then drive the tap fully home. Return the bag to the pasteuriser, set the temperature, place the lid on the appliance and leave for
the full pasteurisation time. Allow the bags to cool before packing into the cardboard box. Cooking settings and timings for individual drinks or foods are supplied with the machine. (NB The 20 litre bag is not suitable for use in this pasteuriser as the tank capacity of the pasteuriser is insufficient)
